I have given this some thought and because Anduin's cover is supposedly a grim droid bounty hunter, he's going to dress the part at least externally. It's going to be all dark clothes, including a big dark coat and likely a dark leather waistcoat, looking something like this:


When he's relaxing more he'd be without the coat he's definitely going to give off more of a cowboy vibe. Probably something like this or this?

Vanessa actually likes fashion so will have some fun learning what's fashionable while keeping her own flair (the bustle is outdated for her, but I can't find anything better). She would opt for smaller hair accessories/tiny hats, though, so ignore the big hats.
